Ingredients:
- 8 large, fresh beets
- 1 cup vinegar
- 1/2 cup sugar
- 1 1/2 teaspoons whole cloves
- 1 1/2 teaspoons whole allspice
- 1/2 teaspoon salt
Instructions:
- Start by thoroughly scrubbing the beets and cutting off the tops, leaving about 1 inch of stem. Place the beets in a Dutch oven and cover them with water. Bring the water to a boil, then reduce the heat and let them simmer, covered, for 25 to 30 minutes, or until the beets are tender.
- Once cooked, remove the beets from the water and let them cool. After they’re cool enough to handle, peel and slice the beets, then set them aside in a bowl.
- In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Heat the mixture over medium heat until it comes to a boil, which should take about 5 minutes.
- Once the mixture has boiled, pour it over the beets in the bowl. Place the bowl in the refrigerator for at least one hour to allow the flavors to develop.
- Before serving, drain the beets and enjoy.
