Easy Pickled Beets Recipe: A Simple Way to Preserve Fresh Beets at Home

Ingredients:

  • 8 large, fresh beets
  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 teaspoons whole cloves
  • 1 1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Instructions:

  1. Start by thoroughly scrubbing the beets and cutting off the tops, leaving about 1 inch of stem. Place the beets in a Dutch oven and cover them with water. Bring the water to a boil, then reduce the heat and let them simmer, covered, for 25 to 30 minutes, or until the beets are tender.
  2. Once cooked, remove the beets from the water and let them cool. After they’re cool enough to handle, peel and slice the beets, then set them aside in a bowl.
  3. In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Heat the mixture over medium heat until it comes to a boil, which should take about 5 minutes.
  4. Once the mixture has boiled, pour it over the beets in the bowl. Place the bowl in the refrigerator for at least one hour to allow the flavors to develop.
  5. Before serving, drain the beets and enjoy.
